I built an SS-100 replica on a VW chassis. This is similar in complexity to the car you mention. I spent a total of 61 hours 35 minutes to finish the project in my garage with no special tools. I logged EVERY minute as I wanted to know the answer to exactly the question you are asking.The VW chassis was already stripped of its body and needed only the 16" extension of the pan which is included in the above time total.
I am mechanically inclined and also know electronics as I worked for 40 years as an electronics/mechanical engineer.
I was told the time would run about 100 hours so that is what I planned, 2 weeks. I did the entire thing on an 8 hour a day schedule which I am sure makes it take less time than a project that is spread out over a year where you forget where you were last session and you loose tools, etc. Doing it as a daily job over two weeks, everything is fresh and so it goes more quickly.
I used as an excuse to my wife, since I was out of work at the time, that it was an investment and therefor, I was employed, 8 hours a day. Actually the investment was never cashed in and I still have the car 15 years later.
