I would like to hear some views on the pro and cons of either of these builds. Has anyone had any expierence with both? I'm new to this venture, I have average mechanical skills and good carpentry skills with a large shop.

Both of them are going to come down to the skill of the builder, and you sound like you should be able to do it. If you expand on what your mechanical abilities are then we an give you a clearer answer. Personally betwen the two I would suggest picking the one that you like the most astetically, mechanically and build quality are going to rest on your sholders so you might as well build the one you like the most.
